Sometimes you just want to treat yourself to a yummy French toast breakfast.

RASPBERRY FRENCH TOAST BREAKFAST
Ingredients:
- 2 Cinnamon & Raisin Bread Slices
- 1 Egg
- 2 Tablespoons of oat milk (or any milk of your choice)
- 1 Teaspoon Vanilla Extract
- 1 Teaspoons of Cinnamon
- 1 Teaspoon coconut oil or spray (for frying)
Toppings:
- ½ Cup of fresh Raspberries (rinsed)
- 1 Tablespoon of almond butter
- 2 Teaspoons of honey
Preparation:
First rinse your raspberries and set them aside.
Next, take two slices of cinnamon raisin bread and lightly toast. I like to use “Dave’s Killer Bread Raisin the Roof” slices. This brand of cinnamon raisin bread is delicious and only 90 calories a slice. I usually freeze my bread, so I have to toast it before I use it. But I also notice that toasting the bread first helps keep the final French toast a little firmer. This is good if you don’t like your French toast bread to get too soggy.
While your bread is toasting, take a large dish or bowl and add your egg, vanilla extract, milk, and cinnamon. Mix these with a fork a few times for your batter, but no need to blend perfectly.
Take your lightly toasted slices of raisin bread and soak both slices in the batter at the same time. Do this for a few seconds on each side. While your bread is soaking add your oil (or butter) to your large non-stick pan (or skillet) and set to medium heat.
Add your soaked slices of bread to the pan after it’s nice and hot. To avoid waste, I like to add the rest of the batter on top of both slices of toast while they cook on one side. Feel free to add another dash of cinnamon at this stage if you like. Let the toast cook for about 1 to 2 minutes on each side until thoroughly cooked.
For a beautiful presentation take your two slices of freshly made raspberry French toast and add your almond butter on top of one or both slices. Top with raspberries, placing them on and around your toast. Finish off with a drizzle of your honey (or maple syrup) and maybe some extra cinnamon.
